WHAT'S IN A VIETNAMESE SPRING ROLL FILLING?

HOW TO WRAP SPRING ROLLS

Slow down! You might not believe it at first but preparing spring rolls is one of the most soothing and meditative things you can do in your home kitchens.
The key is to fold and tuck!
Follow these easy instructions on how to assemble fresh spring rolls:
- PREP THE RICE PAPER. Give your rice paper a quick 3-second dip in water. Once out of the water, the rice paper should remain slightly firm.
- READY YOUR INGREDIENTS. Assemble your washed, cut, and prepped ingredients on the side. By the time you're finished, the rice paper would have absorbed enough water to make it soft and gelatinous but still easy to handle.
- START ASSEMBLING. Starting at the upper ⅓ of your rice paper, lay your ingredients while leaving a couple of inches of space on both sides for folding purposes. Start with the lettuce, if you have it in your ingredient list. Layer the rest of the ingredients on top of it, but make sure not to overfill it! You want to roll your rice paper multiple times for a stronger hold.
- ROLL AND TUCK. Slowly pull the edge of the wrapper. Begin rolling and tucking the fillings under the wrapper using your forefingers. The tucking ensures that your spring rollis firm and filled.
- SEAL THE SIDES. For every roll, envelope the sides to seal your tucked fillings in.
- REPEAT THE ROLL-TUCK-SEAL METHOD until your spring roll is fully wrapped!

Spring Roll Wrapper:
Rice paper, dipped in water for 3 seconds
Spring Roll Filling
- 1 cup lettuce leaves
- 1 cup thinly sliced red cabbage
- 2 medium carrots, thinly sliced or julienned
- 1 small cucumber, thinly sliced or julienned
- 2 thinly sliced red chili peppers
- ¼ cup thinly sliced green onions
- ¼ cup roughly chopped fresh cilantro
- ¼ cup roughly chopped fresh mint
- 8 sheets rice paper (spring roll wrappers)
Peanut Sauce Ingredients
- ⅓ cup creamy peanut butter
- 2 tablespoons Kikkoman Aji Mirin
- 2 tablespoons San-J Tamari Soy Sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon Kadoya Sesame Oil
- 2 cloves garlic, pressed or minced
- 2 to 3 tablespoons water, as needed
Making Vietnamese Spring Rolls
- Cook brown rice noodles according to package instructions. Drain and toss the noodles with sesame oil and salt.
- Leaving about 1 inch of space, place lettuce on the top 1/3 of the damp rice paper. Afterwards, layer small portions of your herbs and vegetables.
- Fold the edge up over the fillings, rolling upward and tucking the filling in a compact manner. Fold over the short sides to enclose all ingredients.
- Keep rolling, tucking, and enclosing until you get a fully wrapped spring roll.
- Repeat with the remaining ingredients.
- To make the peanut sauce: Whisk together the peanut sauce ingredients and add 2-3 tablespoons of water gradually until you achieve your preferred dip consistency.
