Chop chocolate into small pieces, unless using chocolate chips.
Gently heat cream in microwave in 10 second intervals until warm but not boiling.
Melt chocolate by stirring in cream. If cream is starting to cool down and chocolate isn't all melted, place back in the microwave for 10 seconds and stir. Repeat until all chocolate is melted.
Cover in plastic wrap and cool in refrigerator for 3 hours or until hardened.
Shape ganache into desired shape. You may roll into balls or cut into squares.
Coat each piece in matcha or cocoa powder.
