What better way to celebrate spring with fresh spring rolls! A combination of fresh vegetables and chewy noodles, dipped in sweet peanut or savory hoisin sauce is a tasty and healthy experience. Rolling these might seem daunting at first, but the key to it is going slow and steady, rolling the filling nice and tight. Once you get a hang of it, you might just get addicted to rolling whatever you have in your fridge into your own version of a spring roll!

Ingredients

1 tsp Kadoya Sesame Oil

¼ tsp fine sea salt

1 cup lettuce leaves

1 cup thinly sliced red cabbage

2 medium carrots, thinly sliced or julienned
-
1 small cucumber, thinly sliced or julienned
-
2 thinly sliced red chili peppers

¼ cup thinly sliced green onions
-
Cut up pieces of cooked pork or prawns (omit for vegan version)

¼ cup roughly chopped fresh cilantro
-
¼ cup roughly chopped fresh mint
-
8 sheets rice paper (spring roll wrappers)

Bowl of water (for dipping the rice paper)

⅓ cup creamy peanut butter

2 tbsp Kikkoman Aji Mirin
-
2 tbsp San-J Tamari Soy Sauce
-
2 tbsp honey or maple syrup
-
1 tbsp Kadoya Sesame Oil
-
2 tbsp garlic, pressed or minced
-
2 to 3 tbsp water, as needed

Directions
Spring Roll Assembly
Cook brown rice noodles according to package instructions.
Drain and toss the noodles with sesame oil and salt.
Dip rice paper in water for 3 seconds. Once out of the water, the rice paper should remain slightly firm.
Leaving about 1 inch of space, place lettuce on the top 1/3 of the damp rice paper.
Layer small portions of your herbs and vegetables.
Fold the bottom edge up over the fillings, rolling upward and tucking the filling in a compact manner. Fold over the short sides to enclose all ingredients.
Keep rolling, tucking, and enclosing until you get a fully wrapped spring roll.
Cut the rolled spring rolls into desired length, or serve as is.
Peanut Sauce
Whisk together the peanut sauce ingredients.
Add 2-3 tablespoons of water gradually until you achieve your preferred dip consistency.
