Directions
In a pan, stir-fry green and red peppers over warm olive oil until tender. Set aside.
In the same pan, saute garlic and red onions until fragrant.
Add the shrimp and stir until lightly colored orange, making sure not to overcook.
Stir in Mae Ploy Red Curry paste.
Pour coconut milk and water. Stir until well-combined.
Boil for 5 minutes then stir again.
Reduce heat to low. Simmer for 3 minutes or until sauce thickens.
Stir in cooked green and red peppers.
Turn off the heat and add pineapples chunks.
Serve with rice and garnish.
